My sister is not a cake person, but she will consider a chocolate cake if it is moist enough. So, I have taken this recipe to its very limits of being considered a cake. In Johannesburg, there is a restaurant called Bellini’s . Their food is simple yet delicious and complex. The vibe is very ‘Urban Bistro’ - menu is written on a blackboard inside, there is a wooden bar, a simple cake stand at the center of a room, cream umbrellas outside with wooden tables - but think 'premium when you’re picturing it. Anyway! I digress. Bellini’s has a cashew nut and chocolate cake that is next level. It is, without a doubt, one of my favourite cakes in the world. I have tried for years to get this recipe right. But I think this version is pretty damn close if you ask me!
It has several thin layers of a recipe that tests the limits of what a cake actually is. It has the crisp top (almost like a meringue) and a fudgy chocolate-torte center - barely any flour, predominantly good quality chocolate) so it comes out as the moist cake that you could possibly imagine. In between each layer is a rich, dark chocolate and cashew nut studded ganache (think Lindt ad-looking melted chocolate with so many cashews it is essentially a crunchie layer and a soft layer all in one). Cashews are the most delicious, buttery, slightly malty taste which really comes through in every bite. It is a recipe that celebrates cashews just as much as it does chocolate.
If you are a chocolate cake or chocolate dessert lover, this is the one for you.
I can bake this cake in a 5” tin, or a 7” tin (small and medium size, respectively). This is quite a low cake. With 4 layers it is about 18cm tall. So for those of you who want something dramatic and tall but equally as delicious - I have also created the celebration cake version of this cake - which is taller because I use layers of chocolate mousse for height. Serving:
I don’t know if anybody out there is like my mom, who likes to slightly warm up her chocolate cake before eating it - but this is one cake that truly does not need that. That is already the texture of this cake.
Serve it with some fresh strawberries. Or exactly as it is.
This cake also freezes well.
